One of my best friends and I get into an argument and, me being me, I had difficulties apologizing. So instead of groveling at her feet, and because I am very broke, I decided: “I’m going to make a cake for her!” A regular cake would be too big, so I decided: “I should make a mini cake!” After a little bit of searching, I found a mini cake recipe that was absolutely perfect.
Vanilla Cake:
- 6 TBSP unsalted Butter, softened
- 1/2 c. granulated Sugar
- 1 large Egg
- 1 TBSP Vanilla Extract
- 3/4 c. All-Purpose Flour
- 1/8 tsp. Salt
- 1/4 tsp. Baking Soda
- 6 TBSP whole Milk
- 1/2 tsp. Apple Cider Vinegar
- 1 TBSP Butter
- 1 TBSP Milk
- 1 tsp. Vanilla
- Powdered Sugar
For the icing, mix together the butter, milk, and vanilla with a clean electric mixer until combined. Then, add in powdered sugar a little bit at a time until it reaches the desired consistency. (I used about a cup.) If the mixture is too runny, add more powdered sugar. If the mixture is too thick, add in a little bit of milk (Only a little! A little goes a LONG way.)
* You can add in food coloring to either the batter or icing, or both for a cuter cake!
Tip: I divided the batter into six different bowls and added food coloring to make the following colors: red, orange, yellow, green, blue, and purple. Then I took six large spoons (one for each color) and spooned in each of the different colors, alternating colors, only a couple of spoonfuls each before moving onto the next color, then going back to the first and repeating. Then I took a toothpick and swirled the batter around a little to help the colors leak into each other, but not enough to mix the colors together. It baked into a really cute rainbow cake!
I was really hesitant at first to put apple cider vinegar into my cake mix, but it ended up tasting really good and I don’t even like cake! The name may say “cake for two,” but I felt like it made four servings.
